Carolyn HillmanWinemaker and Oak Sensory Profile Consultant
Carolyn Hillman, Innerstave’s Sensory Profile Consultant helps our clients achieve their desired flavor profiles in their wines. Being a winemaker herself, she understands how the right amount of oak and toast can make a big difference in a wine’s character. Carolyn treats our clients’ wines as if they were her own – she is passionate about helping them achieve their goals.
After earning her B.S. degree in Agribusiness and minor in Wine & Viticulture at Cal Poly, SLO, Carolyn found her way to the wine industry and fell in love with the vineyard her first harvest. Previous to Innerstave, Carolyn worked in the wine industry for 16 years in Sonoma, Napa, Mendocino, and Lake Counties at the Larson Family Winery, Rack & Riddle Winery and Three Wine Company in Clarksburg. She moved from the tasting room, to lab and vineyard sampling, to assistant winemaker and winemaker. Carolyn has done everything from cellar to bottle, as well as designing labels, label printing, general marketing, managing the lab and cellar operations. She has made gold medal wines, both red and white varietals and has used oak products, ranging from alternatives to barrels.
What Carolyn enjoys most about her work at Innerstave is helping people achieve success in the art of winemaking.
When she is not working, Carolyn enjoys spending time with her dog Charlie, who comes with her to work. A winery dog, Charlie loves the vineyard almost as much as Carolyn does. Carolyn also loves spending time with her family, sharing wine with friends, camping, hiking in the mountains or on the coast, and traveling when she can.
